English Muffins Recipe
Ingredients:
2 cups all-purpose flour
1 tablespoon sugar
1 teaspoon salt
1 packet active dry yeast (about 2 1/4 teaspoons)
1/2 cup warm milk (110°F or 45°C)
1/2 cup warm water (110°F or 45°C)
1 tablespoon butter, softened
1/4 cup cornmeal (for dusting)
1/2 teaspoon baking soda (optional, for fluffier muffins)
Instructions:
1. Activate the Yeast
In a small bowl, mix the warm water, warm milk, and sugar. Sprinkle the yeast over the liquid and stir. Let it sit for 5-10 minutes, until it becomes foamy.
2. Make the Dough
In a large bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture along with the softened butter.
Mix everything together until the dough starts to come together. If the dough is too sticky, add a little more flour, 1 tablespoon at a time.
3. Knead the Dough
Turn the dough onto a lightly floured surface and knead for about 8-10 minutes until it becomes smooth and elastic.
4. First Rise
Place the dough in a lightly greased bowl, cover with a clean towel, and let it rise in a warm place for about 1-1.5 hours, or until it doubles in size.
5. Shape the Muffins
Punch down the dough to release any air bubbles. Roll the dough out on a floured surface to about 1/2 inch thickness.
Use a round cutter (about 3 inches in diameter) to cut out the muffins. You can also use a drinking glass if you don't have a cutter.
6. Second Rise
Place the cut muffins onto a baking sheet that’s been lightly dusted with cornmeal. Sprinkle a little more cornmeal on top of the muffins.
Cover with a clean towel and let them rise for another 30 minutes.
7. Cook the Muffins
Preheat a griddle or non-stick skillet over medium heat. Once hot, cook the muffins in batches, making sure not to overcrowd the pan. Cook for about 5-7 minutes on each side, or until golden brown. The muffins should puff up and become firm.
8. Cool and Serve
Allow the muffins to cool on a wire rack before slicing them. English muffins are best served warm with butter, jam, or as part of a sandwich.
