Breakfast Burritos Recipe
Ingredients
4 large flour tortillas
4 large eggs
1 cup shredded cheese (cheddar, Monterey Jack, or your favorite)
1 cup cooked breakfast sausage, bacon, or ham (chopped)
1 medium-sized potato (diced and cooked, or use frozen hash browns)
1/2 cup diced bell peppers (any color)
1/4 cup diced onions
2 tablespoons olive oil or butter
1/4 cup salsa (optional, for serving)
1/4 cup sour cream (optional, for serving)
Salt and black pepper to taste
Step 1: Prepare the Ingredients
1. Dice the potatoes into small cubes if using fresh potatoes. Cook them in a skillet with 1 tablespoon of olive oil over medium heat until crispy. Alternatively, use pre-cooked hash browns.
2. Chop the bell peppers, onions, and your choice of meat (sausage, bacon, or ham).
Step 2: Cook the Fillings
1. In a large skillet, heat 1 tablespoon of olive oil or butter over medium heat.
2. Add the diced onions and bell peppers. Sauté until soft and fragrant (about 3–4 minutes).
3. Add the cooked meat to the skillet and cook for another 2 minutes. Set aside.
Step 3: Scramble the Eggs
1. Crack the eggs into a bowl, season with salt and black pepper, and whisk well.
2. In the same skillet, add a little oil or butter and pour in the whisked eggs.
3. Stir gently until the eggs are fully cooked but still soft. Remove from heat.
Step 4: Assemble the Burritos
1. Lay a tortilla flat on a clean surface.
2. Place a portion of scrambled eggs in the center.
3. Add a layer of cooked potatoes, the sautéed vegetable and meat mixture, and shredded cheese on top.
4. Optional: Add a spoonful of salsa or sour cream for extra flavor.
Step 5: Fold the Burritos
1. Fold the sides of the tortilla inward, covering the filling.
2. Roll the tortilla tightly from one end to the other to create a burrito.
Step 6: Heat the Burritos
1. Heat a clean skillet over medium heat.
2. Place the burritos seam-side down in the skillet and cook for 2–3 minutes on each side until golden brown and slightly crispy.
Step 7: Serve and Enjoy
1. Cut the burritos in half for easier handling, if desired.
2. Serve warm with additional salsa, sour cream, or hot sauce on the side.
